How to blow your diet in one afternoon…

Two of SuperSoldier’s favorites: mom’s Chernobyl beans and mom’s pizza. Unfortunately, they’re two of my favorites, too. I probably had eight bites of beans and about a half of a slice of pizza….

There’s always tomorrow, right?

    Eight bites of beans and half a slice of pizza? Hey, your version of blowing your diet is MUCH better than mine! I would’ve had three or four slices of pizza. Congratulate yourself on the willpower you DID have.

    Mmmmm, now I want pizza…

    • Believe me… I wanted 3 or 4 slices!!! (I make excellent pizza, if I do say so myself!) And a large bowl of beans… with a little cheese, some Tostitos scoops to eat them with… yum!

    Do you make your own crust? I have yet to find the right recipe that gives me the results we like. If you do please share. If not, what do you use?

    • Yes. I make my own crust. It’s so, so yummy. I don’t measure…. but i’ll tell you what I do:

      It’s a really basic recipe. Very basic and very plain.

      First, I use the kitchenaid. I don’t do all of my sewing with a hand needle and thread, either ~ I like my machine. 🙂

      I use, ummmm, about 2.5 cups of warm water, only, only, only use REDSTAR YEAST. ONLY.( never fleischmann’s. ) Lately I’ve only found redstar in the envelopes and I use about 1.5 envelopes. I put in 2 generous pinches of salt and just a tsp or 2 of sugar. I “proof” the yeast. Once proofed, I add bread flour (1/3 – 1/2 of a 5lb bag; i prefer and usually use King Arthur) and let the machine knead it. I add more flour if necessary. I like for the dough to be just barely not sticky… really just barely. If I have to err, I err on the side of slightly sticky. I put the dough in a large, oiled bowl and turn it in the bowl to coat all sides and I let it rise to double or slightly more. I roll it out to the thickness that each person likes (I do custom pizzas). Actually, I usually double this recipe. If there is leftover dough I either roll it out and prebake it partially and then freeze it for lunch pizzas later or I make sticky cinnamon rolls with it the next morning.

      I bake my pizza at 475°

        I forgot to tell you that I splash some oil (canola) in before the flour. No idea how much… maybe a couple of tablespoons. I don’t know that it’s essential, but I do it, so….

        This is great! Maybe I need to switch back to Redstar, that could be my problem. However, I’m not finding it as easily here in VA. I think Walmart had it? Maybe I need to go by sight and feel of the dough more than measuring everything accurately. Great ideas for the leftover dough! Thanks!

        • I think when it comes to yeast dough, going by sight and feel is essential. The weather can have an impact on how things “cook up” so getting it right by feel and sight is, I think, more reliable.

          And yes, yes, yes on the redstar! once i dumped fleischmann’s my bread/pizza dough made a miraculous transformation! I firmly believe that it is a superior yeast. (using enough yeast helps, too. most recipes I tried use less than I use.. not by great amounts, but still less.) that’s why i usually use king arthur flour, too… as Papa John says, “better ingredients, better pizza.” If i’m going to go to all of that trouble, I’m going to use the best and get the best product i can get. I hope it works for you and you love it, too! Let me know if you can’t find Redstar. I’m sure I can send some to you.
